Our Client owns and operates two full-service casual restaurants serving American cuisine in a historic suburb of a Midwest metropolitan area. In addition to the restaurants, the Company also operates, on one site, a brewery making a wide selection of custom trademarked “American style” brewed beers. Both restaurants serve a full menu of soups, salads, sandwiches, pizza, meat, and seafood, with dinner entrees averaging $15-$17. Revenue consists of food (74% of 2008 sales), liquor (25%), and retail sales (1%) including all types of logo clothing and hats.
The Company makes its beer by utilizing a 10-barrel system to produce its trademark varieties. Our Client’s restaurants are well established in the community and do not rely on extensive advertising to drive customer traffic. The restaurants have strong reputations, drawing locals and tourists alike. Its business development strategy is built first and foremost around serving excellent quality food and fulfilling the customer’s dining experience. In addition, management works to develop strong local relationships by participating in area events and charities. Both restaurants maintain their own individual websites that promote unique events, specials, and restaurant updates.
